My name is Emmanuella “Mimi” Kalume, and food has always been my love language. I am the proud owner of Mimi’s Kitchen, LLC, where every dish is crafted with care, culture, and creativity.
Born in the Democratic Republic of Congo, raised in Johannesburg, South Africa, and later settling in suburban Chicago, my life has always been seasoned with diverse flavors. My parents were my first teachers in the kitchen—my father gravitated toward classic American dishes, while my mother honored our Congolese traditions. Different styles, same passion: serving others with food that brought people together. That spirit of hospitality is something I carry with me in every plate I prepare.
From the Battlefield to the Kitchen
Before stepping fully into the culinary world, I served as a combat medic in the U.S. Army for 13 years. Service is woven into the fabric of who I am, whether it was caring for soldiers in uniform or now nourishing families and communities through food.
After retiring, and with the encouragement of my son, I went back to school and earned my AA in Hospitality Culinary Arts. Education sharpened my skills, but my passion has always been rooted in the same belief: food should not only taste good, it should do good for our bodies and our spirits.

My mission is threefold:
To help people build a healthier relationship with food—proving that nutritious meals can be just as enjoyable as indulgent ones.
To educate and empower others to embrace cleaner ingredients and simple cooking methods that fit into everyday life.
To elevate the perception of African cuisine in mainstream dining, showcasing its elegance, complexity, and artistry on the fine-dining stage.
